Mediterranean Lemon Parsley Salad

If you have been craving a fresh, light side dish, look no further than this Mediterranean Lemon Parsley Salad. Inspired by tabbouleh, this salad features chopped parsley, tomatoes, and a simple, but refreshing taste infused with lemon. But it also adds romaine lettuce, similar to a more western salad or perhaps somewhat reminiscent of fattoush salad, but without the bits of pita.

This lemon parsley salad pairs especially well with a Mediterranean entree, such as Kofta. Its medley of lemon-infused vegetables perfectly balances out the Kofta’s beefy flavors, as well as other kebabs, shawarma, or the like. While the lemon parsley salad is great as a side salad, you can also enjoy it as a main entree by adding protein, such as grilled chicken or chickpeas.

This no-frills salad is extremely quick to make, taking no more than 10 minutes from start to finish! It does not involve any cooking. It is also naturally gluten-free and vegan. Scroll down to see how you can make this lemon parsley salad!

Ingredients

  • 1 head Romaine lettuce
  • 1 cup Parsley, flat leaf
  • 2 cups Tomatoes
  • 1/2 Onion
  • 1 cup Cucumber
  • 1 Lemon, or 1/4 cup Lemon juice
  • 1/4 cup Extra virgin olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

First, cut the romaine lettuce into 1/2-inch wide shreds. Add the shredded lettuce to a large salad bowl. Next, small dice the onion and roughly chop 1 cup of flat leaf parsley. Add the onion and parsley to the salad bowl.

Next, cut the tomatoes into bite-sized pieces. I used 8 Campari tomatoes to make 2 cups of tomatoes, but you can also use other types of tomatoes, such as plum tomatoes or cherry tomatoes. Quarter the cucumber length-wise and slice the wedges into 1/4-inch slices. Add the cucumber and tomato to the bowl as well.

Lastly, add lemon juice, extra virgin olive oil, salt, and pepper to the lemon parsley salad. Gently toss the salad and it is ready to be enjoyed!
