I like keeping breakfast simple most mornings. But I also like to start the day right. That’s when this super easy, super quick, well-balanced breakfast recipe comes to the rescue. This recipe is based on Korean steamed eggs, called “Gyeran-jjim,” which is a popular Korean side dish commonly served at Korean restaurants.
But this is not your Grandma’s Gyeran-jjim! Including untraditional ingredients like cheese, tomatoes, and spinach, this is a really great breakfast item. I am calling this recipe Fluffy Eggs because, well, the eggs are fluffy! The texture of the egg is similar to an omelette or scrambled eggs, but airier and fluffier.
This healthy, naturally gluten-free, low-carb/keto breakfast is unbelievably quick and easy to make. All you need is a microwave and 5 minutes. Scroll down to see how you can make this delicious and easy breakfast!

Ingredients

- 2 Eggs
- 1/4 cup Milk or water
- 1/4 cup Shredded cheese
- 4 Cherry tomatoes
- 5 Baby spinach leaves
- A pinch of salt
Instructions

Break 2 eggs into a bowl and add milk or water. Adding milk will make the eggs richer and creamier, but you can certainly use water instead.
Next, quarter the cherry tomatoes and roughly chop the baby spinach. Add them to the bowl. Also add shredded cheese and a pinch of salt. You can use any type of shredded cheese you like: Cheddar, Mozzarella, Colby Jack, etc.. Anything goes!
But don’t stop there. Feel free to personalize the fluffy eggs even more by adding or omitting whatever ingredients you like.
Using a fork, whisk the eggs with all the other ingredients and microwave the bowl for 3 minutes. If you are skipping the tomatoes and spinach, you can instead cook the fluffy eggs for only 2 minutes.

And just like that, this easy breakfast is ready! Caution: fluffy eggs may be hot.
