Ingredients

  • 2 Eggs
  • ¼ cup Milk or water
  • ¼ cup Shredded cheese
  • 4 Cherry tomatoes
  • 5 Baby spinach leaves
  • A pinch of salt

Instructions

  • Break 2 eggs into a bowl and add milk or water.
  • Quarter the cherry tomatoes and roughly chop the baby spinach. Add to the bowl.
  • Add shredded cheese and a pinch of salt.
  • Using a fork, whisk the eggs with all the other ingredients and microwave the bowl for 3 minutes. If skipping the tomatoes and spinach, microwave for only 2 minutes.
