Swedish Meatballs with Cranberry Sauce

Ingredients

  • lbs Ground beef
  • 1 Onion medium
  • 1 cup Breadcrumbs
  • 1 Egg
  • ¼ cup Flat-leaf parsley extra for garnish
  • 1 tsp Salt
  • ½ tsp Pepper
  • tsp Nutmeg
  • ¼ cup Flour
  • 2 cups Beef broth
  • 1 cup Heavy cream
  • ½ tsp Allspice
  • ½ tsp White pepper

Cranberry Sauce

  • 12 oz Cranberries
  • ½ cup Orange juice
  • ½ Lemon
  • ½ cup Sugar
  • ¼ tsp Nutmeg
  • ½ tsp Cinnamon

Instructions

  • Finely chop or blend onion and parsley in a blender or food processor. In a large mixing bowl, add onion, parsley, ground beef, breadcrumbs, egg, 1 tsp nutmeg, salt, and pepper. Mix and form meatballs that are 2 inches in diameter.
  • In a large pan or skillet preheated over medium heat, cook the meatballs for 15 minutes while rolling them every few minutes.
  • Once the meatballs are cooked, sprinkle the flour over the meatballs and stir to coat the meatballs with flour. Add beef broth, heavy cream, ½ tsp nutmeg, allspice, and white pepper. Stir and cook for 5 minutes until the sauce thickens. Serve over egg noodles or mashed potatoes with a side of cranberry sauce.

Cranberry Sauce

  • In a sauce pan, add cranberries, orange, lemon, sugar, nutmeg, and cinnamon. Cook for 15 minutes over medium heat while stirring occasionally. Cook until about three quarters of the cranberries have softened and burst.
