Korean-Flavored Meatloaf with a Sweet 'N' Spicy Sauce

Instructions
Prepare the vegetables. With a knife or food processor, finely chop the onion and scallions. Grate the ginger and mince the garlic cloves.
Put the ground beef, eggs, and breadcrumbs into a large mixing bowl. Add the chopped onion and scallions, minced garlic, and grated ginger. Finally, add soy sauce, 1 Tbsp Honey, sesame oil, salt, and pepper.
Mix the ground beef mixture and form a loaf on a baking sheet lined with parchment paper. Bake the meatloaf at 350°F for 50 minutes.
Mix gochujang with 2 Tbsp honey. Brush the sauce onto the meatloaf. Place the meatloaf back in the oven and bake it for 20 additional minutes, or until the meatloaf reaches an internal temperature of 160°F.
Garnish the meatloaf with extra chopped scallions. Serve with a side of rice.
