Homemade Beef Fried Rice
This easy beef fried rice is nutritious and gluten-free!

- 4 cups cooked rice
- 1 lb ground beef
- 4 eggs
- 16 oz mixed vegetables with peas and carrots frozen
- ¼ cup soy sauce optionally gluten-free
- ¼ cup vegetable oil
- salt
- pepper
- ¼ cup chopped scallions optional
On medium heat, cook ground beef with 1 Tbsp of soy sauce until browned.
Slide ground beef to one side of the pan and scramble the eggs on the other side.
Add vegetable oil and frozen vegetables to the pan.
Add cooked rice and soy sauce to the pan. Mix the ingredients and cook for 5 minutes.
Salt and Pepper to taste.
Optional- Add chopped scallions.
