Easy Sweet Cranberry Glazed Meatballs

Ingredients

  • Meatballs Ginger pork meatballs (see below) or 32 oz bite size meatballs
  • 1 (14oz) can Jellied cranberry sauce
  • 1 Tbsp Soy sauce
  • ½ cup Ketchup
  • ¼ cup Brown sugar

Ginger Pork Meatballs

  • 2 lbs Ground pork
  • 2 cloves Garlic
  • 1 Onion small
  • 1 inch Ginger root, 1 Tbsp ginger powder or grated ginger paste
  • 2 Tbsp Parsley
  • ¾ cup Breadcrumbs
  • 1 Tbsp Soy sauce
  • 1 Tbsp Ketchup
  • 1 Egg

Instructions

  • Add meatballs (see below) to a large skillet or pot over medium heat.
  • Add jellied cranberry sauce, soy sauce, ketchup, and brown sugar. Cook for 10 minutes while stirring. If using frozen meatballs, cook for 15 additional minutes.
  • Alternatively, cook in a slow cooker for 2 hours on high or 4 hours on low.

Ginger Pork Meatballs

  • Blend or finely chop garlic, onion, ginger root, and parsley. Add them to a large mixing bowl with the rest of the meatball ingredients. Mix well.
  • Form meatballs that are about 1 1/2 inch in diameter. Place the meatballs on a baking sheet with wire rack. Bake for 30 minutes at 350°F.
