Double Mango Meatballs

Beef and Pork meatballs in sweet, tropical mango sauce

Ingredients

  • 1 Onion
  • 2 cloves Garlic
  • 3 tsp Ginger grated
  • cups Mango fresh or frozen
  • ¼ cup Parsley flat leaf
  • ½ cup Breadcrumbs
  • 1 lb Ground beef
  • 1 lb Ground pork
  • 1 Egg
  • tsp Salt
  • ¼ tsp Pepper
  • 1 cup Water
  • 2 Tbsp Lime juice
  • 1 tsp Soy sauce
  • 3 Tbsp Corn starch
  • tsp Paprika

Instructions

  • Finely chop onion, garlic, parsley, and 1/2 cup mango using a food processor or a knife. If using fresh mango, peel the mango first.
  • Add ground beef, ground pork, egg, breadcrumbs, and 1 tsp grated ginger to a large mixing bowl. Also, add the chopped vegetable mango mixture, 1 tsp salt, and 1/4 tsp pepper to the bowl.
  • Mix all the ingredients and form balls that are 1 ½ inches in diameter. Place the meatballs on a baking sheet with wire rack or a baking sheet lined with parchment paper.
  • Bake the meatballs at 400ºF for 30 minutes.
  • While the meatballs are cooking, make the mango sauce. Blend 4 cups of fresh or frozen mango with 1 cup of water and corn starch. Pour the blended mango into a pan. Add 2 tsp grated ginger, lime juice, 1/4 tsp salt, soy sauce, and paprika. Cook the mango sauce over medium heat for 10 minutes while stirring. The corn starch will thicken the sauce.
  • Once the mango meatballs are cooked through, bathe them in the mango sauce. Gently stir the sauce to coat the meatballs uniformly. Garnish with chopped parsley if desired. Serve warm.

Notes

You can cook the meatballs on the stove instead of in the oven. Cook the meatballs in a large pan over medium heat for 20 minutes. Turn the meatballs over occasionally to ensure they are evenly cooked on all sides.
