2lbsChicken thighsboneless
1cupCorn starch
1tspOnion salt
¼tspPepper
1tspGarlic powder
3cupsOilcanola or vegetable
3TbspLemon pepper seasoning
Instructions
Cut up boneless chicken thighs into 1 inch bite-sized pieces. Add the chicken pieces to a large mixing bowl with onion salt, pepper, garlic powder, corn starch, and eggs. Mix the ingredients together to coat the chicken with corn starch and seasonings.
Heat oil in a skillet over medium heat to 350–375ºF. The oil should be at least 1 inch deep in the skillet. Alternatively, you can use a deep fryer. Gently drop the coated chicken pieces into the hot oil and fry for 7 minutes, turning them over after 5 minutes to cook chicken on all sides. Fry the chicken in batches.
When the chicken is golden brown, remove the fried chicken pieces from the oil and place them on a wire rack over a baking sheet to drain the excess oil. Keep the fried chicken warm in a 250ºF oven while you continue frying the rest. Generously sprinkle the lemon pepper seasoning onto the fried chicken.
