Servings: 15 muffins
- 3 Bananas ripe
- 2 cups Flour
- 1 tsp Baking soda
- ½ tsp Cinnamon
- ¾ cup Turbinado cane sugar
- ½ cup Greek yogurt plain, whole milk or reduced fat
- 2 Eggs
- 1 tsp Vanilla extract
- ¾ cup Chocolate chunks or chips semi-sweet
- ¼ cup Vegetable oil
- ¼ tsp Salt
Mash the bananas in a mixing bowl with a masher or a fork. To the mashed bananas, add flour, baking soda, cinnamon, and Turbinado cane sugar. Mix the dry ingredients. Then, add Greek yogurt, eggs, vanilla extract, chocolate chunks, vegetable oil, and salt. Mix all the ingredients until combined.
Line the muffin pan with baking cups. Fill each cup 3/4 of the way with the chocolate banana yogurt muffin batter using an ice cream scoop or a spoon. Add a couple extra chocolate chunks and thinly sliced bananas on top if desired.
Bake the muffins in a 350°F preheated oven for 20 minutes. When done baking, the top will be golden brown and a toothpick will come out clean when inserted.
