- 1¾ lbs Chicken breast
- ½ tsp Salt
- ¼ tsp Pepper
- 1 tsp Garlic powder
- 3 Tbsp Butter
- 1 Small onion or shallot
- 3 cloves Garlic
- 2 Tbsp Tomato paste
- ⅓ cup Vodka
- 1 (28oz) can Crushed tomatoes
- 2 tsp Oregano
- 1 cup Heavy cream
- 3 cups Broccoli fresh
- 1 lb Pasta rigatoni, penne, or fusilli
Cut broccoli into florets. Cook chicken breasts over medium heat for 25 minutes, turning them over halfway through the cooking process. Cut into bite-sized pieces. Cook the pasta according to the package instructions.
While the chicken and pasta are cooking, prepare the vodka sauce. Finely chop or blend garlic and onion. In a medium preheated pan, cook butter, garlic, and onion for 3 minutes. Add tomato paste, oregano, crushed tomatoes and vodka to the pan. Cook for 10 minutes. Lastly, stir in the heavy cream.
With the heat turned to low, add broccoli florets to the vodka sauce. Cook for 10 minutes until the broccoli is tender. If using frozen broccoli, thaw in the microwave first, then add to the sauce. When chicken is finished cooking, also add to the vodka sauce. Toss in the cooked pasta to the chicken broccoli vodka sauce. Serve with grated Parmesan cheese.
