Line a sheet pan with parchment paper and place the chicken thighs. Pour olive oil over the chicken thighs and season with salt, pepper, and garlic powder. Massage the olive oil into the chicken with the seasoning.
Sprinkle the chicken thighs with fresh1 or dry thyme leaves and lemon juice.
Cut the lemons into 1/4-inch slices and top each chicken thigh with up to 2 lemon slices. Put the chicken thighs into a 400ºF preheated oven and bake for 35–40 minutes, until the chicken is cooked through and golden brown.
Take the chicken out of the oven and serve it hot. Garnish with extra thyme sprigs if desired. When eating the chicken thighs, gently press down on the lemon slices to release fresh-squeezed lemon juice over the chicken.
Notes
If you are using fresh thyme, first remove the leaves from the woody stems. Gently scrape off the thyme sprigs by running your fingers against the direction of the leaf growth.
