This versatile dish goes with a lot of different entrees and it can even be used as a topping for rice bowls or cold noodle salads. Its simple flavor feels clean on the palate, yet with just enough sweet and sour flavor to entice you to have more.
It is super easy to quick-pickle cucumbers following this recipe. The cucumbers are thinly sliced to allow for quick pickling; it only takes 10 minutes to pickle the cucumbers. Plus, this recipe does not require any cooking, which is a huge plus when you want to keep things simple on a busy weeknight. Ingredients

- 2 Cucumbers
- 1/2 cup Vinegar
- 1/4 cup Sugar
- 1/2 cup Water
- 1/4 tsp Salt
Instructions

Slice the cucumbers into 1/8-inch slices. Place the cucumber slices in a jar or a bowl.
Add vinegar, sugar, water, and salt to the cucumber slices and submerge the slices in the pickling solution. Gently stir to dissolve the sugar. Pickle the cucumbers for 10 minutes.
Now, just serve the pickles at room temperature or chill them if you prefer cold pickles. The leftover pickles can be refrigerated up to a month.
