What’s a more quintessential home-cooked meal than meatloaf? This classic dish has had a prime spot at the American family dinner table for generations. Traditional meatloaf is absolutely delicious. But I would like to share an exciting new twist on this perennial classic!
This Korean Meatloaf is what I imagine meatloaf might taste like after a visit to Seoul. It’s seasoned with traditional Korean ingredients like soy sauce, ginger, garlic, and honey. But that’s not all! A sauce of honey and Korean pepper paste (gochujang) is brushed on top of the meatloaf for a sweet and spicy kick. Served with a side of rice, you will be delighted with an amazing meal that’s familiar—yet altogether new!
Making this meatloaf is not complicated at all; prepare the meatloaf mixture, pop it in the oven, and let it bake. Brush on the sauce and that’s about it! Scroll down to read how you can make Korean Meatloaf in your own kitchen!

Ingredients

- 2 lbs Ground beef
- 2 eggs
- 3/4 cups Breadcrumbs
- 4 cloves Garlic, minced
- 1 Tbsp Ginger, grated
- 1 Onion
- 1/4 cup Scallion
- 3 Tbsp Soy sauce
- 3 Tbsp Honey
- 1 Tbsp Sesame oil
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 Tbsp Gochujang
Instructions

Begin by preparing the vegetables. Using a knife or a food processor, finely chop the onion and scallions. Next, grate the ginger and mince the garlic cloves.
Put the ground beef, eggs, and breadcrumbs into a large mixing bowl. Add the onion, scallion, garlic, and ginger from the previous step to the bowl. Finally, add soy sauce, 1 Tbsp Honey, sesame oil, salt, and pepper.
Mix the ground beef mixture and form a loaf on a baking sheet lined with parchment paper. Place the meatloaf in a 350ºF preheated oven. Bake for 50 minutes.
Then, mix gochujang with 2 Tbsp honey and brush the sauce onto the meatloaf. Place the meatloaf back in the oven and bake it for 20 additional minutes, or until the meatloaf reaches an internal temperature of 160°F.
Garnish the meatloaf with extra chopped scallions. Serve with a side of rice.
