Homemade Beef Fried Rice

This easy, no-fuss fried rice recipe tastes simply amazing. At the same time, it’s not too involved—I usually cook the entire meal with one hand while holding a 20 pound baby with the other! It is nutritionally well-balanced and is a great alternative to ordering takeout. You get to make healthier choices by deciding what goes in the food and what stays out. Not only that, your wallet will thank you; this hearty meal for four can be made for just under ten dollars! This recipe is especially simple to make if you already have leftover cooked rice in the fridge. Need it gluten-free? Just be sure to use gluten-free soy sauce. Check out the recipe below!

Ingredients

  • 4 cups Cooked rice
  • 1 lb Ground beef
  • 4 Eggs
  • 16 oz Frozen mixed vegetables with peas and carrots
  • 1/4 cup Soy sauce, optionally gluten-free
  • 1/4 cup Vegetable oil
  • Salt and pepper
  • 1/4 cup Chopped scallions, optional

Instructions

Preheat the pan on medium heat and cook the ground beef while breaking it up with a spoon. Add one tablespoon of soy sauce to season the beef.

Once the beef is browned, slide it to one side of the pan. On the other side of the pan, scramble the eggs.

Once the eggs are scrambled, add vegetable oil and frozen vegetables to the pan. The vegetable mix I used had peas and carrots, as well as corn, green beans, and baby lima beans. But you can just use peas and carrots, if preferred.

Last, but not least, add the cooked rice and soy sauce to the pan and mix all the ingredients together. You can use any type of rice you prefer for this recipe. I used medium-grain white rice. Ingredients

  • 4 cups cooked rice
  • 1 lb ground beef
  • 4 eggs
  • 16 oz mixed vegetables with peas and carrots frozen
  • ¼ cup soy sauce optionally gluten-free
  • ¼ cup vegetable oil
  • salt
  • pepper
  • ¼ cup chopped scallions optional

Instructions

  • On medium heat, cook ground beef with 1 Tbsp of soy sauce until browned.
  • Slide ground beef to one side of the pan and scramble the eggs on the other side.
  • Add vegetable oil and frozen vegetables to the pan.
  • Add cooked rice and soy sauce to the pan. Mix the ingredients and cook for 5 minutes.
  • Salt and Pepper to taste.
  • Optional- Add chopped scallions.
