Ingredients

  • Meatballs (Ginger pork meatballs or 32 oz bite size frozen meatballs)
  • 1 can (14oz) Jellied cranberry sauce
  • 1 Tbsp Soy sauce
  • 1/2 cup Ketchup
  • 1/4 cup Brown sugar

Ginger Pork Meatballs

  • 2 lbs Ground pork
  • 2 cloves Garlic
  • 1 Onion, small
  • 1 inch Ginger Root, 1 Tbsp ginger powder or grated ginger paste
  • 2 Tbsp Parsley
  • 3/4 cup Breadcrumbs
  • 1 Tbsp Soy sauce
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 Tbsp Ketchup
  • 1 Egg

Instructions

For the cranberry-glazed meatballs, you can either use frozen bite size meatballs that are 1/2 oz each or make the ginger pork meatballs from scratch. If making the meatballs, finely chop or blend garlic, onion, ginger root, and parsley. Add them to a large bowl with ground pork, breadcrumbs, Worcestershire sauce, ketchup, egg, salt, and pepper. If using grated ginger paste or ginger powder instead of ginger root, add it directly to the bowl. Mix all the ingredients together.

Form meatballs that are about 1 1/2 inch in diameter. Place them on a wire rack over a baking sheet to catch the drippings. Bake the meatballs in a 350°F preheated oven for 30 minutes and the ginger pork meatballs will be ready.

Once the meatballs are ready, it is time to make cranberry glaze for the meatballs. Place the meatballs in a large skillet or a pot. Add jellied cranberry sauce, soy sauce, ketchup, and brown sugar.   • Blend or finely chop garlic, onion, ginger root, and parsley. Add them to a large mixing bowl with the rest of the meatball ingredients. Mix well.
  • Form meatballs that are about 1 1/2 inch in diameter. Place the meatballs on a baking sheet with wire rack. Bake for 30 minutes at 350°F.
