Ingredients
- 3 1/2 lbs Chicken thighs, boneless, skinless
- 1/4 cup Olive oil
- 1 Tbsp Garlic powder
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 2 Tbsp Fresh thyme (2 tsp dried thyme)
- 1/4 cup Lemon juice
- 2 Lemons
Instructions

First, line a sheet pan with parchment paper and place the chicken thighs. Pour olive oil over the chicken thighs and season with salt, pepper, and garlic powder. Massage the olive oil into the chicken with the seasoning.
Next, sprinkle the chicken thighs with fresh or dry thyme leaves and lemon juice. If you are using fresh thyme, first remove the leaves from the woody stems. Gently scrape off the thyme sprigs by running your fingers against the direction of the leaf growth.
Lastly, cut the lemons into 1/4-inch slices and top each chicken thigh with up to 2 lemon slices. Put the chicken thighs into a 400ºF preheated oven. Bake for 35–40 minutes, until the chicken is cooked through and golden brown.

When the lemon thyme chicken thighs are finished cooking, take them out of the oven and serve them hot. Garnish with extra thyme sprigs if desired. While eating, gently press down on the lemon slices for freshly squeezed lemon juice right on the chicken.
