Nectarine Mascarpone Crostini

With summer comes warm weather, beaches, cookouts, and—of course—sweet, fragrant stone fruits. This Nectarine Mascarpone Crostini is a perfect way to enjoy the flavors of summer. Crostini, Italian for “little toasts,” can be made into little open sandwiches with either sweet or savory flavors. This particular crostini is sweet with a creamy mascarpone spread, fragrant nectarine slices, and a drizzle of honey.

This quick, easy recipe can come together in less than 15 minutes. These crostini are the perfect summer finger food. They are incredibly versatile. They can be enjoyed as an appetizer, snack, dessert, or even breakfast. Scroll down to see how you can make this summer confection!

Ingredients

  • 1 Baguette
  • 8 oz Mascarpone cheese
  • 2 Tbsp Honey (extra for drizzling)
  • 2 Tbsp Lemon juice
  • 3 Nectarines

Instructions

Cut the baguette into 1/2 inch thick slices. Cutting them diagonally will maximize the surface area of the bread slices. Toast the baguette slices in a panini grill for 10 minutes, or bake them in a 350ºF preheated oven for 5 minutes. You can also grill them for a minute or two just to get grill marks on them.

While the bread is toasting, prepare the toppings for the crostini. Wash the nectarines and slice them into 1/4 inch thick wedges. You do not need to peel the nectarines, unless you want to.

Next, make the Mascarpone spread. Simply mix the Mascarpone cheese with honey and lemon juice in a bowl. Mascarpone cheese can usually be found at the fancy cheese section at the grocery store, but if you cannot find it, you can substitute it with plain cream cheese. If using cream cheese, add 2 Tbsp of heavy cream to the cream cheese as the mascarpone cheese has a higher fat content.

Once the baguette slices are finished toasting and have cooled down a bit, spread 2 Tbsp of the Mascarpone spread on each of the baguette slices. Then, top the crostini with nectarine slices. Drizzle with honey. Serve at room temperature.

  3. Things i have seen in terms of pc memory is the fact that there are specs such as SDRAM, DDR and the like, that must match the specifications of the mother board. If the pc’s motherboard is pretty current while there are no computer OS issues, improving the memory space literally will take under one hour. It’s one of the easiest personal computer upgrade processes one can think about. Thanks for discussing your ideas.
