Cod is pretty substantial for a fish without being tough, and I love how flaky it is. Cod itself is lean and tastes pretty mild, so it is absolutely amazing when cooked with some fat, like mayonnaise.
This cod recipe yields rich and moist cod with a delightfully crispy breadcrumb crust. Served with a side of veggies and a carb of your choice, this light yet satisfying meal will be your new go-to recipe. Ingredients

- 1½ lbs Cod fillet
- ¼ cup Mayonnaise
- ¼ cup Parmesan cheese, grated
- ½ Tbsp Dijon mustard
- 1 clove Garlic, minced
- ½ Lemon
- 1 Tbsp Lemon zest
- 2 Tbsp Flat leaf parsley, chopped
- ¼ cup Panko breadcrumbs
- ¼ tsp Salt
- ¼ tsp Pepper
Instructions


Begin by putting mayonnaise, grated Parmesan cheese, Dijon mustard, and minced garlic into a mixing bowl. Add chopped flat leaf parsley, juice of 1/2 lemon or 1-1/2 Tbsp lemon juice, and 1 Tbsp lemon zest. Season with salt and pepper. Mix all the ingredients.

Place the cod fillets in a 9×13 inch baking dish or on a baking sheet. Spread the mixture generously on top of the cod fillets. Then, sprinkle the Panko breadcrumbs on top and gently press them into the mixture. Bake at 400°F for 20 minutes until the fish is cooked through and the crust is golden brown. Garnish with extra lemon zest and chopped parsley if desired. Serve warm.
