Baja Fish Tacos with Creamy Chipotle Sauce

When I crave something light and refreshing, yet more exciting than a salad, I reach for fish tacos. These festive tacos are full of vibrant colors and bright, bold flavors. Crispy fried fish and ample fresh vegetable toppings make each bite perfectly satisfying.

One thing I love about a dish like tacos is that you can assemble each taco just the way you (or the rest of your family) want. There are many options for toppings, including shredded cabbage, avocados, pico de gallo, limes, and peppers. The standout topping is a creamy chipotle sauce that packs delicious heat and creaminess and really fills out these fish tacos.

Ingredients

  • 1 1/4 lb White fish, such as cod or haddock
  • 1 1/2 tsp Salt
  • 1 cup Vegetable oil for frying
  • 1 cup Milk
  • 1 cup Flour
  • 1/2 cup Corn starch
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1/2 tsp Pepper
  • 18 Corn tortillas

Suggested Toppings

  • Pico de Gallo
  • Creamy Chipotle Sauce
  • 1/2 cup Shredded Mexican cheese or Cotija Cheese
  • 3 cups Cabbage, shredded
  • 2 Avocados
  • 2 Limes
  • 2 Jalapeño peppers
  • 1/4 cup Cilantro

Pico de Gallo

  • 2 Tomatoes
  • 1/3 cup Onion
  • 1 Tbsp Cilantro
  • 1/2 Lime
  • 1/3 tsp Salt

Creamy Chipotle Sauce

  • 1/2 cup Sour cream
  • 1/4 cup Mayo
  • 1 Chipotle pepper in adobo sauce
  • 1/2 Lime

Instructions

First, we need to prepare the fish. You can use fillets of any white fish, such as cod, haddock, or tilapia. I used cod. Slice the fillets across the grain into strips 3/4 inches wide. Then cut these strips down to 3 inches length. Sprinkle 1/2 tsp salt on the fish.

Place the fish strips in a bowl of milk. Then, prepare the flour mixture for dredging. Mix together flour, corn starch, 1 tsp salt, paprika, cumin, and pepper in a gallon-sized ziploc bag or a paper bag. Take the fish strips out of the milk and add them to the flour mixture in the bag. Close the bag and shake vigorously to coat the fish.

Heat a skillet with vegetable oil over medium heat. Fry the fish once the oil temperature reaches 350ºF. Frying the fish does not take long. Fry the fish for 4 minutes on one side. Flip and fry for 3 additional minutes, until crispy and golden brown. You probably will need to fry them in batches. Once the fish is finished cooking, put the fish strips on a wire rack or a paper towel to drain the excess oil. You can keep the fish warm in a 200ºF-preheated oven until ready to serve.

Other than frying the fish, there is not much more cooking involved in making these fresh Baja fish tacos. You just need to prepare various toppings to enjoy on the tacos. Cut the cabbage into thin shreds and thinly slice the jalapeno peppers if you want to add some heat to the tacos. Cut the avocados into 1/2-inch cubes and slice the limes, as well. Warm the tortillas either in the oven, on the stovetop, or in the microwave according to the package directions.

Next, make the pico de gallo. Small dice tomatoes and onion and finely chop cilantro. Add them into a bowl and gently mix with lime juice and salt. The pico de gallo is now ready to go on the fish tacos!

There is one last topping that needs to be prepared—the creamy chipotle sauce. In my opinion, this chipotle sauce is a must have for the fish tacos! Making it couldn’t be simpler. It only needs three ingredients: sour cream, mayo, and chipotle pepper in adobo sauce. You can find canned chipotle pepper in the international aisle at most grocery stores. Add sour cream, mayo, juice of 1/2 a lime and one chipotle pepper with adobo sauce into a blender or a food processor. Blend together and the sauce is done!

Serve the fish tacos on a warm corn tortilla with freshly prepared toppings. Enjoy!!

Ingredients

  • lb White fish cod, haddock, or tilapia

Instructions

  • Cut the fish across the grain into 3x¾-inch strips. Sprinkle with ½ tsp salt.
  • Put the fish strips in a bowl with milk. Make a flour mixture by mixing flour, corn starch, 1 tsp salt, paprika, cumin, and black pepper in a gallon-sized ziploc bag or a paper bag. Place the fish strips into the bag, close it, and shake vigorously to coat the fish.
  • Heat the oil to 350°F in a pan over medium heat. Fry the fish in batches for 4 minutes on one side and 3 minutes on the other side. Once fried golden brown, place on a wire rack or a paper towel to drain the excess oil. Keep warm in a 200°F oven until ready to serve.
  • Heat corn tortillas in the oven or microwave, or on the stove according to the package instructions.
  • Prepare the toppings. Thinly slice the cabbage and jalapeño peppers. Slice the limes and avocados. Chop the cilantro.
  • Serve the fish on a tortilla with toppings of choice.

Pico de Gallo

  • Small dice the tomatoes and onions. Mix them in a bowl with the lime juice, salt, and chopped cilantro.

Creamy Chipotle Sauce

  • Add all the ingredients in a blender or a food processor and puree until smooth.
