Sweet Cranberry Apple Coleslaw

This coleslaw is one of my favorite sides to make for burgers, sandwiches, or just about any meat. It balances out these delicious, but rich—and, at times, downright greasy (in a good way)—meals with refreshing sweetness and crunchiness. And it is so simple to make! It involves no cooking and can be made in just 10 minutes. Try this easy upgraded ‘slaw. You will make it over and over again!

Ingredients

  • 4 cups Shredded cabbage
  • 1 Apple
  • 1 cup Dried cranberries
  • 1/2 cup Toasted almond
  • 1/4 cup Chopped scallion
  • 1/2 cup Mayonnaise
  • 2 tbsp Vinegar
  • 2 tbsp Sugar

Instructions

Put 4 cups of shredded cabbage in a large bowl. You can thinly slice the cabbage yourself, or just use a bag of pre-shredded cabbage like I did.

Next, cut the apple into matchsticks and chop the scallions.

Pro tipWhen cutting matchsticks, I find it helpful to slice just almost to the end in the first dimension, rather than all the way through. This helps to hold the slices together when slicing in the other dimension. Then, you can finish the cut or even just pull the last column of matchsticks apart by hand.

With the slicing out of the way, we only need to put it together. Add all the ingredients to the bowl of shredded cabbage. Just look at all the colors! The dried cranberries and apple add wonderfully tart sweetness to the crunchy salad. And the nutty toasted almond and the spicy scallions both bring so much flavor and texture to this beautiful coleslaw. All bound together with juicy, creamy mayo. Once all the ingredients are in the bowl, toss to combine.

And it’s ready! Refrigerate until ready to serve.
