Honey Ginger Tea with Lemon

This honey ginger tea with lemon is a must-have for winter! I live in New England where the winters are frigid and long. So, I came to find things to love about this season. The joyous hustle and bustle around the holidays, scrumptious holiday treats, playing in the snow with the boys, and snuggling in our cozy home are a few of the things I cherish during winter. One thing that I dread, however, is all the seasonal illnesses that seem to crop up in wintertime. It can be downright frustrating that, despite my best efforts to keep all our hands germ-free, we still invariably end up having a few sore throats and runny noses.

Fortunately, there is something I can do to aid my family in recovery. And, so can you! Make this jar of honey infused with ginger, lemon and cinnamon before the cold season starts and keep it in the fridge. It has been shown that ginger, honey, lemon, and cinnamon all can aid your recovery from a cold. As the colds come, brew cups of hot ginger tea with it to alleviate the symptoms. Preparing this jar for the upcoming winter will give you peace of mind, so you can fully enjoy the season!

Ingredients

  • 2 cups Honey
  • 2 cups Ginger, peeled and julienned
  • 2 Lemons
  • 2 Cinnamon Sticks

Instructions

Begin by peeling the ginger roots. This is the more tedious part of the whole process, but it is really not that hard. I found it helpful to use both a vegetable peeler and a small paring knife. If you soak the ginger in water first, you can also use a spoon to peel the roots. Once the ginger is peeled, cut each root into thin slices. You can just use the slices, or cut them further into shreds to increase the surface area so their flavor is more readily absorbed by the honey.

Next, wash the lemons by scrubbing with baking soda. Cut the lemons into thin slices.

Then, it is time to put all the ingredients into a clean air-tight glass jar. First, put half the julienned ginger on the bottom; add the lemon slices next; then, pour a cup of honey into the jar. Repeat for another layer. Add the cinnamon sticks and stir to ensure all the ingredients are mixed well.

Very quickly, the lemon will infuse the honey with its juice, making the honey runny. Close the jar and store in the refrigerator. After 4 to 5 days, the cinnamon-, ginger-, and lemon-infused honey mixture will be ready for making tea. To make the lemon ginger tea, add a couple spoonfuls of ginger, lemon, and honey to one cup of hot water. Steep for 5 minutes and then melt that sore throat away!

Ingredients

  • 2 cups honey

  • Peel and cut ginger into thin shreds.
  • Wash the lemons by scrubbing with baking soda and cut into thin slices
  • Put 1 cup of ginger and half of the lemon slices in a clean glass jar. Pour 1 cup of honey. Repeat. Add two cinnamon sticks and stir.
  • Close the jar and refrigerate. The ginger lemon-infused honey will be ready for making tea in 5 days.
